2.2 Insulation. The manufacturer shall use insulation with a “K” factor that will meet the outer shell temperature requirements set in paragraph 2.3.
2.3 Outer shell temperature. The temperature of the outer shell of the cabinet shall not be more than 10°F below the ambient temperature when the refrigeration system is in operation and the temperature in the storage compartment is being held at 0°F.
2.4 Tray rails. A fixed type tray rail fabricated from 300 series stainless steel with supporting hardware shall be supplied with each ice cream cabinet. The tray rail shall extend the full length of the cabinet. The height of the tray rail from the floor shall be adjustable from 34 to 35 inches. The tray rails shall be capable of supporting the weights listed when the weight is equally distributed over the full length of the tray.

2.5 Refrigeration system. The refrigeration system and component parts shall be completely installed and connected in the machine compartment; making the fully automatic, self-contained, mechanically cooled ice cream cabinet ready for connection to an external electric power source.
2.5.1 Refrigerant charge. The assembled refrigeration system shall be evacuated, completely dehydrated, and charged with the necessary amount and type of refrigerant and lubricating oil necessary for operation.
2.5.2 Ozone depleting substances. Class I ozone depleting substances, in accordance in section 602 (a) of the Clean Air Act Amendments 1990, 42 USC 7671a (a) as implemented by 40 CFR 82, Protection of Stratospheric Ozone, shall not be used for refrigerant gases, or for any other purpose, or employed in any process associated with manufacture of any component parts for this item. See the 5.6 for additional information.
2.6 Temperature control. The ice cream cabinets shall be equipped with a thermostat to maintain temperature control. The control shall be adjustable to maintain temperatures selected between minus 10°F and minus 15°F. The thermostat shall be adjusted and installed so that the cabinet temperature will not vary more than plus or minus 5°F from the temperature setting when ambient conditions vary from 50°F to 110°F. An external dial type thermometer, calibrated in Fahrenheit and having a temperature scale range which includes the operating range of the cabinet, shall be furnished.
2.7 Performance. The empty ice cream cabinets shall be capable of obtaining an internal temperature of minus 5°F in not more than eight hours in an ambient of 110°F. when fully loaded the ice cream cabinet shall maintain internal temperatures between minus 10°F and minus 15°F with an ambient temperature range of 50°F to 110°F.
