series stainless steel. The inner liner shall be separated from the outer shell by breaker strips except as required by UL Standard No. 471. Cabinets shall be provided with 4 casters, handles located at both ends, fixed tray rails, and a full perimeter wraparound bumper. Unless otherwise specified, a number of baskets necessary for full capacity operation shall be furnished with the cabinets (see 5.2). Basket lid shall be fabricated from aluminum, stainless steel, or a corrosion-resistant metal. Cabinets shall be either size 1 or size 2 as specified and each cabinet shall be provided with an automatic self-contained refrigeration system. Cabinet storage compartments shall have manually adjusted, self-leveling mechanism to maintain ice cream containers at a constant top level. All materials used in the self-elevating mechanism shall be corrosion resistant.
2.1.1 Cabinet. The cabinet shall form a completely rigid structure to provide support to a full load of ice cream and the refrigerating system. The overall maximum dimensions of the ice cream cabinets shall be as shown in table I.

2.1.2 Breaker strips. The breaker strips shall be fabricated of composition board, or styrene plastic, or vinyl-chloride plastic, or any combination of these materials. Where foamed-in-place polyurethane insulation is used, all plastics in direct contact with the insulation shall be ABS (acrylonitrile, butadiene, styrene). The breaker strips shall join and shall make a vapor seal with the inner liner and outer shell. The edges of the breaker strips shall be eased or rounded. All plastics used for breaker strips shall not impart odor or taste to foods.
2.1.3 Lids. The lids shall be fabricated of 300 series stainless steel or molded fiberglass. The lids shall be insulated and shall have gaskets or other provisions to form a tight seal between the lids and the cabinets. When specified, the lids shall be the see-through type fabricated for plastic (see 5.2).
2.1.4 Casters. Four casters of the full swivel type shall be furnished on each cabinet. The casters shall be a minimum of five inches. A minimum of two of the casters shall be equipped with a foot operated braking device which shall hold the cabinet stationary.
